What’s Brewing: White Winter spirits

Co-owner Jon Hamilton brought several suggestions for great sippers this winter:
- Apple Brandy – Made from Erickson Orchards cider in Bayfield and barrel-aged about eight months. Hamilton says it makes a great Old Fashioned or can be served straight with good dark chocolate or aged hard cheeses.
- Kirschwasser – Cherry Brandy made from Apple Hill and Erickson Orchards cherries. This is a traditional Kirsch, a white spirit. Hamilton suggests serving it with one ice cube or in a cocktail that will emphasis the cherry flavor.
- Maple Mist – Made from maple syrup from Merrill, Wis., and laid on wood sustainably harvested in Brazil. Look for notes of baking spice, graham cracker, and maple.
- Snow Maiden – White Winter’s version of a peppermint schnapps. It is made from honey spirits and peppermint. The Hamiltons say it is excellent in hot chocolate.
- Holiday Harbor – A spiced honey liqueur, made from honey water and yeast. White Winter likes combining it with lightly warmed Connolly’s Tom and Jerry batter or with vanilla ice cream and short bread cookies.
