Chef Stuart’s ‘Cowboy Caviar’

Cowboy caviar is an easy summer snack that can be eaten with tortilla chips.
Chef Stuart Gordon says “cowboy caviar” or “Texas caviar” came about in the 1900s. He likes to start with diced tomato and jalapeno, then adds the “star of the show,” grilled corn on the cob.
For this recipe, he also added yellow bell pepper, some red onion, black beans, and the juice from a large lime. He also jazzes it up with chopped pickles and some kimchi.
