Edible Minnesota’s fresh focus on tomatoes
For the summer issue, “Edible Minnesota” magazine is putting fresh focus on tomatoes.
Creators Nick Mies and Ami Jarosinski say there is a short story about tomatoes along with recipes for tomato tarts and more.
“We personally love tomatoes,” Jarosinski said. “The first couple tomatoes of the year always taste the best, but a couple weeks in you’re thinking, what am I going to do with all of these tomatoes? We really tried to find some different ways for people to try new recipes or inspire them to think of different ways themselves too.”
Mies said one of the goals of “Edible Minnesota” is to inspire readers to have a deeper connection with their food.
“One of the best ways to become closer to your food is to cook it yourself,” he said. “We always include several recipes in each issue. And we try to make the recipes unique but still approachable.”
The magazine is a free publication that comes out four times per year. They also post recipes online.
