Food Truck Friday: Singing Chihuahua tacos

If your food truck sets up regularly at the Grand Rapids Farmers Market, the food better be fresh. Luckily, that’s something the couple behind the Singing Chihuahua Taco Trailer prides themselves on.

The idea for the name came from Gus Sheker’s work out in Denver.

“Down there, they actually have an expression when things go wrong: ‘Ay chihuahua.’ And whenever something would go wrong with the process or at work, I would go, ‘Ay chihuahua,’ like that. And it just is a weird thing,” Sheker said.

He and his wife Susan set themselves apart with nontraditional tacos.

“I think that a taco is like a sandwich. And you can put anything in it that’s good,” Sheker said. “And we do.”

They incorporate Jamaican, Korean, Mediterranean, and other flavors. Gus makes an original sauce he calls the Chihuahua sauce, a “slightly hot chili cream sauce.” And everything is made fresh.

On Wednesdays and Saturdays, the Singing Chihuahua sets up the trailer from 8 a.m. to 1 p.m. at the Grand Rapids Farmers Market. Then they go across the street to Klockow Brewing at 2:30 p.m. until 7 p.m.
