The perfect picnic spread

What makes a good picnic? Baihly Warfield stopps in at the Merryweather Inn's Kitchen.

It’s the perfect time to host picnics, and Beth Koralia, the innkeeper at the Merryweather Inn, came up with a summery spread.

Koralia whipped up two salads, some cold pizza, lemon bars, and a Paloma.

Merryweather Inn Orange and Dill Salad

4 c oranges chopped

4 c cucumbers sliced

1/2 onion chopped

1 tsp salt 

1 tsp garlic

1/4 c fresh dill chopped

Mix

Merryweather Inn Asparagus Salad

1 bunch lightly cooked asparagus

3 c chopped tomatoes

1/2 red onion

1/2 c olive oil

1/2 c balsamic vinegar

1 tsp salt

1/3  c chopped fresh basil

1 tsp garlic powder

1 tsp pepper

Mix

Grandma Merryweather’s Pizza Dough 

3 tsp yeast 

2 tsp sugar 

2 c water 

4 c flour 

1 tsp salt

2 tsp garlic powder 

1 tsp Italian seasoning 

Combine and knead until smooth, then cover and let rise. You can cheat and put it all in a bread maker on the dough setting.

Press dough into a jelly roll pan, add your favorite toppings and bake. My favorite combinations are marinated artichokes and olives; tomato sauce, pepperoni and cheese; sun-dried tomatoes feta and olive oil; pesto and mozzarella and tomatoes.

Bake 45 min at 350 to one hour or until done. Serve hot or cold. 

Easy way lemon bars

sugar cookie dough

lemon pie filling

1/4 c butter

1/2 c sugar

1/2 tsp salt

In a 9×9 pan, press sugar cookie dough and bake for 8 minutes 350º. Add lemon pie filling, top with the topping and bake for another 10 min or until done. Let cool before cutting.

Merryweather Citrus Bars

In a heat proof bowl over a pan of simmering water, combine

5 egg yolks

1 c sugar 

1/2 c butter 

Zest of one Lemon

Zest of one lime 

Juice of 2 lemon

Juice of one lime  

Stir constantly until it thickens.  It takes about 6-10 min to get thick. If it doesn’t get thick, add another egg yolk.

For the Crust

Combine in a food processor

1 stick melted butter

1 tsp salt

1 cup sugar 

2 c flour

Take half out and save that for the topping. 

To the other half, add 1 egg. If it’s too crumbly, add a little bit of water until it sticks together. If it’s too wet, add a little more flour. Press this dough into 9×9 pan. Bake 10-12 min. Add the citrus filling, then the topping. Bake again 10 min. Let cool and cut. 

Merryweather Inn Paloma for 4ish people

6-8 oz of tequila (measure with your heart)

Zest of 3 limes

1 liter of grapefruit pop

Garnish with sliced citrus
